Willemijn, Joerie, Kirsten, Marleen, Zinzi, Demi and Cas, Inholland students, are wild about goose and founded Saucijs Uniq. The culinary product with a good story came about when the students were tasked with developing a product with goose meat, derived from the waterfowl that was considered a pest by Raaskal's boss.
"Goose is tricky. Many people find it even a bit exciting to eat. It's wild, so we ended up with the more luxurious appetizer: a sausage roll. That looks accessible," says Willemijn.
To find the right flavor, the students enlisted the help of herb and spice manufacturer Verstegen. Saucijs Uniq offers three different variations of sausage bites: traditional, thyme and mushroom-sesame.
Meanwhile, Saucijs Uniq started its own business in collaboration with Young Entrepreneurship with self-conceived and self-developed products under the motto "Wild of Goose." Solving a local problem in a sustainable way in a controversial market, Saucijs Uniq won the 2021 FICA award for the most sustainable food project.
